Looks good since the traffic stays at the site. We just turned down a request to take over a Metra commuter station cafe. Boarding and the parking lot is on the other side of the tracks! And, to break even, I calculated a 25% capture rate needed.

Zero waste is difficult. No bags? No paper cups? We dropped the compostible cups because the seams failed too frequently.

With an office site, I'd think you could successfully encourage people to bring down their mugs! Ditch the bottled water. We just put in another water pitcher or urn or whatever we bought at Costco. Fill it with filtered water, ice it down, slice up some fresh lemon. Free. Customers love it.

Love to. Going to the Green Festival in Chicago on Saturday. We're a certified Green Business through Coop America. You should check it out as authenticity in green business is important.

Bill,
When I go to a coffee shop, it's about atmosphere -- I wrote an article about coffee shops being the 'third place' (after home and work). I want to feel I can curl up in a comfy chair or a secluded table and read, write and drink gallons of coffee without feeling that I need to move along... I sometimes get the 'move along' feeling from the larger places.
